- 1360.77-2267.96 g eye of round roast
- 2-4 chorizo sausage or 236.59 ml chopped ham
- 4.92 ml salt
- 2.46 ml pepper
- 118.29 ml flour (may need more for a larger roast)
- 59.16 ml olive oil
- 3 clove garlic (sliced)
- 9.85 ml oregano
- 2-3 bay leaves
- 14.78 ml paprika
- 226.79 g can tomato sauce
- 2 large onions (sliced)
- 1 green pepper (chopped)
directions
- Slice sausage.
- Make a cut in roast length wise down the center and create a pocket.
- Stuff with with sausage.
- Cut smaller slits in roast and insert garlic slices.
- Mix salt and pepper with flour and dredge roast in flour mixture.
- In a large pan or dutch oven heat olive oil and brown roast on all sides.
- (You aren't cooking the roast, just lightly browning it, the whole process should take about 5 minutes) Reduce heat and add remaining ingredients.
- Cook, covered over low heat for 3 hours.
- May add additional tomato sauce if necessary.

I?m ?originally from Texas, but now live in Florida. Still gotta have that spice though....love chipotle peppers, habaneros, and jalapenos. This is a picture of myself & my 2 daughters taken in Dec'06. I am working on my graduate degree, & still work as a nurse prn. When I'm not cooking and eating what I cook... I head for the gym to work out. As far as cookbooks, I love the church/ community cookbooks, where someone has dug out old handwritten recipes by granny and shared them with others-those are the best kind. If I had a month off, I'd for sure go hiking, would love to visit Australia and New Zealand.?
