A quick and easy method for cooking salmon adapted from a National Seafood Educators recipe. Boneless cod, butterfly cut large shrimp, or halibut may also be prepared using this recipe.

Ingredients Nutrition

  1. Combine lemon juice, wine, olive oil and salmon fillets in a large ziploc bag; seal bag and marinate in refrigerator for 1 hour, turning occasionally.
  2. Remove salmon fillets from bag and discard marinade; place fillets in a lightly oiled baking dish; toss bread crumbs, spices, olive oil, and lemon juice together in a small bowl; spread crumb mixture evenly over top and sides of salmon, pressing lightly to hold crumbs in place.
  3. Bake at 400° for 12 minutes or until fish flakes easily when tested with a fork.

I have made this several times and it is wonderful! The baking time is right on and the flavors are so good. Left out the white wine because I don't keep that on hand. This is in my keeper file. Thanks for posting.
