  • Preheat oven to 350°F.
  • Place butter in a roasting pan and melt in the oven for 4 to 5 minutes.
  • Remove from oven and set aside.
  • In a shallow dish, whisk together the buttermilk and egg.
  • In another shallow dish, combine the ground cashews, flour, and salt.
  • Dip chicken pieces in buttermilk mixture, then coat with the cashew mixture.
  • Place chicken in roasting pan, turning to coat with melted butter.
  • Bake uncovered, for 1 hour and 10 minutes or until chicken becomes golden brown.

I love to try new recipes and mainly look for ones that are new and different, such as a twist on an old favorite or something no one's ever thought of! I also enjoy writing in my spare time. I live in Northeast Ohio where the weather isn't the greatest, humid in the summer and cold winters- but it has been nice growing up by the lake! I own two wonderful cats who can be quite a handful at times, but my fiancee and I couldn't live without them!
