A low-carb version of the classic Greek dish adapted to what I had on hand. Healthy and filling.

  1. Sauté onions and garlic until tender.
  2. Meanwhile, combine ricotta, yogurt, and whisked eggs. Add seasonings, lemon juice, spinach, and onion/garlic mix.
  3. Transfer to greased deep-dish pie plate.
  4. Bake in 375F oven for 40-45 minutes, until set.
