  1. Preheat oven to 350. Spray mini muffin tins with cooking spray.
  2. In blender, combine garlic, salt, pepper, eggs and cottage cheese until smooth.
  3. Transfer to a bowl and stir in quinoa, roasted peppers, basil and Parmesan.
  4. Divide quinoa mixture among prepared muffin tins.
  5. Bake 18-23 minutes or until tops are golden.
