  1. Peel potatoes.
  2. Cut into quarters.
  3. Boil for 20 minutes.
  4. Put in large bowl.
  5. Drizzle olive oil over potatoes. Toss them so that they are totally covered.
  6. Season with a good amount of salt and pepper. Toss again.
  7. Cover with Glad Wrap. Leave in fridge overnight.
  8. To cook (next day), preheat oven to 210c.
  9. Toss potatoes again.
  10. Transfer to baking dish. Ensure they are not on top of each other--must be single layer
  11. Put in hot oven for 45 minutes approx--turn after 20 minutes.
