This is a South Beach Diet recipe. It's my favorite way to eat chicken salad.
- 3⁄4 cup chopped cooked chicken
- 1⁄2 medium apple, chopped
- 2 tablespoons celery
- 2 tablespoons light mayonnaise
- 1 tablespoon sugar-free apricot preserves
- 1 whole wheat pita bread, cut in half
- Mix all ingredients, except pita, until well blended. Cover.
- Refrigerate at least 1 hour.
- Fill pita halves with chicken salad.
