This is a South Beach Diet recipe. It's my favorite way to eat chicken salad.

Ingredients Nutrition

  • 34 cup chopped cooked chicken
  • 12 medium apple, chopped
  • 2 tablespoons celery
  • 2 tablespoons light mayonnaise
  • 1 tablespoon sugar-free apricot preserves
  • 1 whole wheat pita bread, cut in half

Directions

  1. Mix all ingredients, except pita, until well blended. Cover.
  2. Refrigerate at least 1 hour.
  3. Fill pita halves with chicken salad.
