Directions

  1. Trim ends of celery (Use tops for soups, stews, etc.).
  2. Separate celery into ribs.
  3. Thinly slice on the diagonal about 6 cups.
  4. Combine oil, pineapple juice, lemon juice, poppy seed, salt and white pepper.
  5. Pour over celery.
  6. Add carrots.
  7. Toss until well mixed.
  8. Serve on lettuce leaves, if desired.
