Throw this together in a flash. The walnuts add a nice crunch. To make it even easier, buy a package of carrots already shredded at your grocers. Makes a great side dish.
- 1⁄2 lb grated carrot
- 3⁄4 cup chopped walnuts
- 3⁄4 cup raisins
- 1⁄2 cup mayonnaise
- 1 teaspoon sugar
- 1 tablespoon fresh lemon juice
- Mix together carrots, walnuts and raisins.
- Combine mayonnaise, sugar and lemon juice and stir into carrot mixture.
- Chill until ready to serve.
This salad hit the spot for my lunch today, just perfect! I scaled this down for 1 person. I love the taste of the lemon with the sweetness of the sugar and the raisins. Thanks Marie, so glad I tagged this in 123Hit Wonders! ;)
This is DH's favorite. I used Miracle Whip instead of the mayo. I put the raisins in a small amount of water and microwaved them for 1 minute to plump slightly then drained off any excess water. Other than that followed the recipe. This is a nice side dish.
This is one of my favourite side dishes. I use low-fat plain yoghurt as a substitute for the mayonnaise.
