Crunchy Broccoli Salad With Artichokes and Olives

"So simple, but the taste is divine. This is a great side dish for the holidays. Also great for something different for potlucks."

  • 1 bunch fresh broccoli
  • 1 (8 ounce) jar marinated artichoke hearts (reserve juice)
  • 12 cup sliced pimento-stuffed green olives
  • 12 cup good quality mayonnaise
  • salt and pepper

directions

  • Peel tough layer from broccoli stems and dice broccoli stems and florets into about 3/8" squares.
  • Chop marinated artichoke hearts into similar size as broccoli.
  • Combine broccoli, olives, artichoke hearts in a bowl and toss with mayonnaise and a couple of tablespoons of the reserved artichoke marinade.
  • Add salt and pepper to taste.
  • Serve chilled. Stir well before serving.

Busy Busy Busy... I love to cook, but I work full-time. Also, we eat out a lot for lunch and both DH and I are dieters so we cook mainly on weekends. Passions -- My family, my puppy dog and my friends. Love to do dinners with good friends, good wine, good food. I truly am "Suzy Homemaker". If I could afford it, I'd stay home, garden, sew, paint, quilt, shop, and fish with an occasional good read to break the monotony...Alas, I must work... Maybe I'll hit the lottery. Favorite cookbook -- Almost all of them. I love the Williams Sonoma cookbooks, but living in small town South Mississippi, I find it hard to get the quality ingredients. Pet Peeves -- I live in a dry county (no alcohol, ergo no good wine unless I bootleg it in from across the state line). This also means no good grocery stores and limited ingredients for trying new dishes.
