Fantastic! I have been looking for a batter like this for the longest time - one that is crunchy and "poofy" - if you know what I mean. I first tried this for haddock nuggets, and I just tried it again for chicken nuggets, and I was extremely pleased with the results both times. When I used it for the haddock, I added some Ole Bay Seasoning. For the chicken, I didn't bother adding any seasonings. Because the batter is delicate, I do not use my fry basket, I just drop the nuggets directly into the oil so they do not stick to the basket or each other.
This was the first time we tried frying fish in batter at home and this turned out really good. Super easy. We heated the oil on a four or five on the stove, so not sure if it go to 375, but it worked well. Only thing we didn't do was add seasoning as the recipe calls for and we should've -- something to note for next time.
