  • 4 crumpets
  • 120 g ricotta cheese
  • 250 g punnet strawberries, hulled and sliced
  • 29.58 ml of 100% fruit strawberry all-fruit spread, no added sugar

directions

  • Toast the crumpets on both sides.
  • Gently mix together the ricotta, strawberries and fruit spread. Place on each of the crumpets.

  1. This was really tasty, I used cottage cheese in place of ricotta. The combo of cheese, fruit & jam would also be a great filling for wraps or topping for pancakes, went great with the crumpets too though. Thanks Sonya!
     
  2. I really liked this! I used whole milk ricotta. I'll be trying it with part-skim next time. I put mine on lightly buttered toast, but I know I would like this on crumpets, or english muffins, or anything else like that! My 2 year old son ate his mixed with cheerios. I'm excited to try this with different fruits and matching jams also!
     
  3. I made this as a simple yet special breakfast to start off 2009! One of the kids put the jar of Strawberry fruit spread in the fridge totally empty however, so I drizzled a little honey to add a bit more sweetness (no longer strawberry season for us so the berries are not that sweet) Will be adding this recipe to my keep file for the future. Made for Jan 09 AUS/NZ Swap.
     
  4. Very nice breakfast alternative. I used some frozen black raspberries and blackberry jam. I also added a touch of cinnamon and vanilla extract and a sprinkling of Splenda. Lovely!

I live in Keilor Downs, Victoria in Australia. I am a receptionist in Melbourne. My favorite cook books are anything Weight Watchers or Simply 2 good 2 be true also any muffin or scone cook books. I love cooking easy stuff but I love a challange ocasionaly on the weekends when i have a bit more time. My pet peeve is how much capsicum/bell peppers are in recipes now as i am elergic to them.
