- 1 French baguette, stale, cut into 1/2 inch cubes
- 1⁄3 cup butter, I used Smart Balance
- 1⁄3 cup olive oil
- 1⁄2 teaspoon dried oregano
- 1⁄2 teaspoon dried basil
- 1⁄2 teaspoon dried thyme
- 1⁄2 teaspoon dried tarragon
- 1⁄2 teaspoon salt (or to taste)
- 1 teaspoon course ground pepper
- 1 teaspoon course granulated garlic
directions
- Preheat oven to 200.
- Place cubed bread in big mixing bowl.
- Melt butter in small sauce pan. Add olive oil, stir, remove from heat.
- Add in all the spices, salt and pepper.
- Drizzle half over bread, toss to coat. Add second half to desired amout of flavor(for stronger flavor add all, for light flavor only use half), toss again to coat well.
- Spread evenly in single layer on an ungreased cookie sheet.
- Bake for a about 2 hours to get all the moisture out.
- Turn oven up to 300 let cook for 15 minute and mix them up and cook for about 15 min longer or until nice and toasted. Cool on paper towel then store in an airtight container.

Found some old stale San Francisco Sourdough in the back of the freezer. Didn't have enough bread, burned the croutons a little, long before they were supposed to be done, ate most of them myself because I just couldn't through them away, and then, a Miracle! One of the pickiest eaters in the world said, "can we try those croutons?" I am about to make attempt number 2, but will change nothing but oven temperature. I assume even though you say stale, you are not talking about cutting the bread up and forgetting about it for a week.

As with everyone here, I love to cook. I love to collect cookbooks from all eras and types of food. My favorite is a set of books from the 60's called the Encyclopedia of Cookery, by Woman's Day. I hope to get a bunch of those recipe's posted here for all of you. I also love to use my crockpot! So much, that I had to go buy another one. I am a songle mom, so my biggest challenge is cooking smaller portions for me and my 4yr. old, Nicholas. He is my biggest fan and I him! I work for H-E-B as a Wine Manager. I love wine! So this job is perfect for me, I get to help people choose wine and sample it out all day. Which lets me try new wine all the time! I hope all of you enjoy my recipes and maybe one will become a new favorite for you!
