Very good dish... tender chicken and vegetables with a unique sauce. It's definitely not like Pad Thai... nevertheless we liked it and will make it again. I have made a lot of Thai food and it doesn't resemble anything Thai that I have eaten or made. I would guess it's really a fusion recipe rather than a true regional cuisine.

I tasted the sauce before the last 30 minutes, it about knocked me over... it needed to be diluted. I added 1 1/2 cups of water to the crockpot with still 20 minutes to cook. I could tell right away that that was a big improvement.

I didn't have a red pepper, so I threw in three carrots and a couple of small potatoes. I also used a very generous 1/2 tsp of crushed red pepper (probably a little less than a tsp... we like heat).

Thanks for a great recipe that will be part of our go to dishes... love that it can be made in the crockpot.

  1. Place Chicken, Bell pepper and Onion in Crockpot.
  2. Mix soy sauce, broth and spices together.
  3. Pour mixture over Chicken.
  4. Cook on high for 3 hours.
  5. Whisk Peanut butter, starch, 1 Tablespoon of Soy sauce and lime juice together.
  6. Add 1 cup of juices from crock pot and mix until smooth.
  7. Stir mixture into crock pot.
  8. Cook 30 minutes more.
  9. Garnish with cilantro, green onion and peanuts.
  10. Serve with Rice.
