This was very good. I used Trader Joe's salsa and taco seasoning. It came out with some kick. So, I might try a milder salsa next time. It had a wonderful flavor and was really good with the rice. It is yummy with sour cream, too. It is very easy to make and it makes quite a bit. Mine took closer to 5 hours on high, but I used 3 pounds of chicken.

  1. Put some salsa on the bottom of the crockpot, put 2 chicken breasts down and sprinkle the taco seasoning on them (repeat for the rest of the layers of chicken). Soften the cream cheese and stir it with the remaining salsa and pour over the chicken. Then put the Chili beans on top.
  2. Cook on LOW for 8 hours or cook on HIGH for 3-4 hours. You can stir as you like. Serve over rice (or just eat as is if you can't do carbs).
