Ingredients Nutrition

  • 3 cups potatoes, sliced
  • 3 cups carrots, sliced
  • 12 cup onion, chopped
  • 1 34 cups fat-free vegetable broth


  1. Combine potatoes, carrots, and onion in your slow cooker.
  2. Pour broth over top.
  3. Cover and cook on HIGH for 4-6 hours.
  4. Mix well before serving.

This was easy to make and resulted in tender veggies. I did add some herbs and spices and also reduced the amount of broth by half. Thank you for sharing your recipe. Reviewed for Pick A Chef Spring 2007.
