Crock Pot Turkey Breast With Stuffing and Dried Fruit

I like to think of this as a one pot Thanksgiving dinner. I believe its from Southern Living Magazine. I want to thank Pinky Kookie for posting it for me in the Community Forums.

  1. Coarsely chop apples (with or without peels) and mix with stuffing mix, onion, dried fruit, thyme, salt, pepper and poultry seasoning.
  2. Place mixture in the bottom of a 4-5 quart crock pot.
  3. Pour chicken stock over mixture making sure all the stuffing is well covered.
  4. Place turkey on top of stuffing.
  5. Cook on low for 8 hours or until the turkey reaches 170 degrees on a meat thermometer.

I haven't tried this yet but intend to this year for Thanksgiving as it sounds like it will be very flavorful and moist.
We plan to have a small family gathering and at my age, I will like the less fuss method so I will not be too tired to eat at meal time.
Good to serve with this would be a sweet potatoe casserole or mashed potatoes w/gravy and vegetable of you choice. Of course apple or pumpkin pie for dessert. Sounds easy enough even for an old lady!
