I made this for PAC Fall 2008. There's nothing really wrong with this recipe other than it didn't have enough flavor for our tastes. I think it could do with less broth, at least one can less. I added a big dash of Montreal Steak Seasoning to the left overs. I think that this is a good base recipe. Other veggies could be added and any number of spices.
Threw this in the slow cooker last night. Used leftover steak that mu husband grilled. Left out the celery and used celery salt. Did not have any fresh onions on hand so used dried. I also added half of a bag of frozen peas and corn to the pot. It was a little on the bland side for our taste so close to the end of cooking time I added a couple of good size dashes of Tony's Creole Seasoning and garlic powder. Will make again using the extra spices and maybe adding a few others. Update - Made this for dinner again tonight using leftover grilled steak and leftover baked potatoes. Made on the stove top by sauteing the carrots in butter. When they were done I added the chopped onions and steak....sauted for a few minutes and added broth, simmered for about 15 minutes then added the leftover pototes that I had chopped up. Simmered another 15 minutes then added a couple of good dashes of Montreal Steak Seasoning. Came together very quickly given almost everything was already cooked and tasted better to me than when done in the crockpot.
A nice basic soup/stew. I prepared as directed but I did add a little more flour as I wanted more of a gravy than a broth and I used stew meat for convenience. Love the mild onion and garlic flavor that my old stew recipe lacked. Thanks for sharing!
