Quick and easy crock pot recipe that makes a great sauce.

  1. Place frozen thighs in the crock pot.
  2. Whisk remaining ingredients except broccoli, cornstarch, water and rice together and pour over chicken.
  3. Cook on low 4 to 5 hours.
  4. If using broccoli, add to crock pot 1 hour before chicken is done.
  5. Before serving, remove chicken and broccoli to serving dish and keep warm.
  6. Turn crock pot on high.
  7. Stir cornstarch into water and add to crock pot.
  8. Stir occasionally until it thickens and bubbles.
  9. Serve over the cooked rice.

I found this recipe really bland. There was not much orange flavor in my opinion. Perhaps it was supposed to be 1 cup of orange juice concentrate? I also had trouble getting the sauce to thicken. I ended up putting it into a saucepan and and put it over higher heat. I also tried additional cornstarch but it didn't get as thick as I would hope. We ate most of it, but after the rave reviews, I expected more.

I love this recipe, the chicken is nice and moist, and very flavorful. I've made this twice so far and the first time I made this I did it according to the recipe. But, the sauce was a little too thin for my taste. I wanted something nice and thick that really covered the chicken almost like a glaze and didn't get the rice too soggy. So, the second time I made it I doubled the cornstarch and it came out perfect. Thank you so much for such a great recipe. Tip: For the chicken I used organic chicken tenders. Less fat & no bones. :-)
