Very simple and comforting dish. Unfortunately I found out that I was out of onions so I threw in some baby carrots instead. I added ham broth base and seasoning to the water and a little crushed red pepper. I let it cook on low while I was at work. When I came home, the potatoes weren't quite done so I turned it up to high for another hour. This completely filled my 6-quart crock pot. I enjoyed some for dinner, gave half to my in-laws (it is one of their favorite meals), and still had some leftovers for myself. Made for My Three Chefs October 2013.
Just excellent! It's wonderful comfort food for the winter, especially. It reminds me of the meals I had as a child. Prep is easy, and it's not too costly.
