Very simple and comforting dish. Unfortunately I found out that I was out of onions so I threw in some baby carrots instead. I added ham broth base and seasoning to the water and a little crushed red pepper. I let it cook on low while I was at work. When I came home, the potatoes weren't quite done so I turned it up to high for another hour. This completely filled my 6-quart crock pot. I enjoyed some for dinner, gave half to my in-laws (it is one of their favorite meals), and still had some leftovers for myself. Made for My Three Chefs October 2013.
