I came up with this recipe when I had an abundance of fresh green beans. After canning 30 quarts, I knew I needed to find something else to do with all those beans! It's easy to prepare and one of my family's "comfort food" favorites. NOTE: not every crockpot cooks the same. My Rival crock pot is 20 years old and on the "high" setting food actually comes to a low boil. If your crock pot does not get that hot, then you will need to adjust for a longer cooking time.
- 907.18 g fresh green beans
- 1 smoked ham hock, cut up
- 2 garlic cloves, minced
- 1 medium onion, chopped
- 473.18 ml Swanson chicken broth
- 2.46 ml salt
- 2.46 ml black pepper
- Place cut up ham hock in crock pot.
- Rinse beans and snap into halves or thirds.
- Place beans over ham.
- Place chopped onion and minced garlic over bean/ham mixture.
- Sprinkle with salt and pepper.
- Pour chicken broth over all.
- Cover and cook on high 4 hours.
The ham, garlic and onion flavors married well with the fresh green beans. I had not tried to use my crockpot to cook vegies before, and was pleasantly surprised at how this dish turned out. Beans were tender and not mushy.
I have made these for many years and they are fabulous! I love the way they smell while they are cooking. This a great Southern dish! Thanks for sharing.
The flavor was good, but it took more like 7 hours on HIGH for them to thoroughly cook.
