I had my doubts about those pineapple chunks, but after they'd cooked a while and absorbed the chipotle flavor - wowser! I used two pounds of meatballs, but kept the rest of the ingredients as listed, 2 chipotle chiles, and then added 1/2 cup chicken broth. This was very well received at a bridal shower. Just enough heat to make it interesting but still appealing to a broad audience. Update: I've made this many times, and no longer add any brown sugar. The pineapple and cranberry add enough sweetness.
I brought this to a party and everyone was intrigued by the subtle heat of the chipotles. Definitely a winner!
These meatballs are great! Everyone at my office loved them. I made a huge batch of them. The meatballs get even better the second day. If you use a 6lb bag of meatballs from Costco, you can alter the recipe. You will need 5 cans of cranberry jelly, 4 (20 oz.) cans of pineapple chunks, 1 1/2 cups brown sugar and 6 chipotle chilis.
Wooo baby! These meatballs are INCREDIBLE! I doubled the recipe after seeing exactly how much a pound of meatballs were and thinking about how much the bunco girls can polish off when they find an appy they like. I just sampled one... Yum-O! I followed the recipe exactly but I did add a couple extra chipotles... 'cause I like 'em! I sincerely hope there will be a few leftovers for tomorrow. If not, I foresee making an early morning run to the grocery for the ingredients. I'm also thinking this would be a good recipe to use with a roast... Hmmm.... Thanks for a great recipe! Definitely a keeper!!!
This was great...I don't care for store bought meatballs but this really upped the taste and was excellent! Served it over hot rice instead of using them as appetizers, lol! And might even add green peppers next time and there will be a next time!!!
Haha--I read it wrong at put in a whole can of chipotle chiles!!! It was yummy!!! Good thing I made a separate batch for the kids without chiles.
I used my own meatballs. The sauce is very tasty, everyone loved it. I used 2 chipotle chiles and the next time I may kick it up by using more (if just for hubby and I). It's a keeper.
Just made these for a reception at Church. I left out the pineapple because of a family allergy. Everyone loved them! My husband's family couldn't get enough of them and loved that they weren't the run of the mill BBQ meatballs. I will DEFINITELY be using this again! Thank you so much!
These were the best meatballs. I used my entire small can of chipotle chiles w/the sauce and they had a kick, but were sweet and delicious. A really great tasting meatball, and really easy. Thanks so much for posting. (9/23/08) I need to write an update, since I made these for my neice's grad.party. Many kids at the party were known meatball haters. By the end of the party, the meatballs were gone, and the meatball hating kids were asking for more. My sister has made these many times since, and all are in love with these meatballs.
This had a wonderful taste, with a slight bit of heat on the back end. I made these for my son's Court of Honor and didn't get pictures of them before they were gone, but I'll be making them again!
