Tomatillos are the key ingredient in this recipe. Fresh and cooked they are used in Latin American green sauces. I found the Tomatillos and chicken combination very delicious! Slowly cooked, this chicken recipe has fresh new flavors that absolutely deserves to be discovered. The tomatillo is a small round fruit covered with a parchment-like, green husk. Fruit resembles a green cherry tomato and it's flavor is lemony and slightly acidic. Don't forget to remove the husks before using them.
- 1 roasting chicken
- 1 onion (diced)
- 1 celery rib (diced)
- 3 garlic cloves (whole)
- 8 tomatillos (diced)
- 1 red pepper (diced)
- 1 teaspoon salt
- 1⁄2 teaspoon pepper
- 1⁄2 teaspoon paprika
- Season chicken with salt, pepper and paprika.
- Add salsa and arrange all around chicken.
- Cook at low temperature for 6 - 8 hours.
Followed this recipe with the exception of adding some additional veggies(sweet banana pepper and fresh garden tomato). Served it on brown rice. My husband and I thought it was very bland. I like the ease of this recipe but the chicken needs some flavor. Maybe next time I will go for a more taco feel and add a packet of taco seasonings.
This was good to get me started on the idea of using tomatillos in the Crockpot. We love them so we added lots more, and heeded the advice to add more spices. Came out pretty good, we're going to kick the spice up a bit next time.
This was very bland for my family. It smelled great while cooking, but the taste just wasn't there.
