This was so good. It was better than I thought it would be! I cut the recipe in half, but now am wishing I hadn't, so I could have leftovers. My 5 year old daughter LOVED this and had 3 servings!!! My one year old loved it too. I used frozen corn and frozen chicken breasts. I served over brown rice and we put chopped avocados on top. So yummy!
I substituted 4 oz sour cream for 4 of the 8 oz of neufchatel cheese, and added some shredded cheddar on top of each bowlful. I also used frozen corn rather than canned. It was a little soupy at first, but thickened upon standing. Using a mild salsa, this dish was blander than I prefer. Next time I'd use a medium or spicy salsa, and add some fresh peppers as well. Thanks for an enjoyable recipe! I will make this again.
This dish is excellent! We had it over the Christmas break. We froze the leftovers and I reheated them this past weekend; it was just as great the 2nd time around! :)
I served this over brown rice and my whole family really loved it. I made no changes other than frozen corn instead of canned. This would be wonderful over crushed chips or in tortillas and sprinkle w/ some cheese. You can bet I'll be trying that! Thanx for sharing your recipe.
I prepared this dish tonight and added steamed rice with added onions, green peppers and cumin. The meal was outstanding. For the rice I chopped the onions and the green peppers and dropped them in the boiling water to soften before adding the rice to finish cooking the rice.
Wow! This one is a winner at our house. One daughter likes it over white rice with chopped avocados on top, and the other daughter likes it in a wrap with cheddar cheese. I did use frozen corn and added chopped onion. Also my husband doesn't like chunks of salsa so I gave it a spin in the blender before adding to the mix.
I made this recipe and shredded the chicken right before I added the cream cheese. This recipe is best if you cook it and then refrigerate it overnight. I like to make burritos with it the next day. I add the chicken mix, a little enchilada sauce, onions, olives, peppers, and cheese and put it all in a tortilla and bake for about a half hour until warm. This is the BEST. I make it for all my friends and they cant get enough of it.
My whole family loves this recipe-even my picky kids! Will be making this over and over again!
Gettin the man to eat beans is a challenge... doesn't like them much, wheras I love them, this worked great for me over rice with cilantro. LOVE!
