Insane! I work from home...so I put the chicken (mix of breasts and thighs..about 4 lbs.) in around 8am, when I went up for lunch, about 5 hours later, I shredded the chicken - it was like buttah at that point, falling apart at the touch of the fork - turned the crock down to warm and its been simmering ever since. My house smells crazy good. Soon as I finish work for the day, I'm thinking enchiladas... will freeze the excess meat. Thanks for sharing an incredible recipe!
Anything you can plop in the crock pot and forget about for the day is a great recipe in my eyes. Simple and easy, quick to throw together in a morning rush. My husband told me he never wanted to eat a ground beef taco again after eating this. Super tender and flavourful, it was a big hit at my house!

This is very easy to make but tastes delicious,I made this for fajitas and it was great!
A tad on the salty side, but other than that, a great staple recipe. Could use water instead of chicken stock, or possibly a reduced sodium seasoning. I added a few dashes of tabasco sauce and a handful of chopped fresh cilantro at the end before serving. Thanks!
