Easy and delicious! I could get into these crock-pot dishes. I had to add 2 cups more water for the rice to absorb and expand. Next time, I'll probably just cook the rice separately and add it at the end. Other than that this was fab!

Very easy, very tasty. Husband and 3-year-old both enjoyed it. I cooked brown rice separately and stirred it in.

This was easy and very tasty!! I used "homemade" salsa (Mrs. Wages) and added about 3 cups of cooked regular long grain white rice. I added sour cream, some chopped green onions and Cojack cheese for toppings. Thanks for posting!

This recipe was awesome! I think next time I will mix the shredded cheese & some sour cream in right before serving. I might also try adding a can of corn & a can of diced tomatoes when I add the beans. I also needed to add about 1/2 c water to the crock pot when I mixed in the rice. Thanks for this easy delicious meal!
