Made this as an easy, healthy crockpot meal. It was so simple to put together, and has a lot of veggies and fiber from the beans. My husband LOVED it!

  1. Place cubed chicken in slow cooker. Season with salt and pepper.
  2. Add celery, carrots, mushrooms, onions, corn and both cans of kidney beans. Stir to combine.
  3. Add chicken broth and salsa and stir well.
  4. Cover and cook on low for 7 - 9 hours.
  5. Serve with tortilla chips, cheese, and sour cream (as desired).
