Crock Pot Chicken and Wild Rice Soup

  • DO NOT use quick cooking or instant rice.
  • Combine broth, chicken (cut into bite size pieces), water, celery, carrots, rice and enclosed seasoning packet, onion, pepper and parsley flakes in a 4 to 7 quart Crock Pot slow cooker; mix well.
  • Cover; cook on LOW for 6 to 7 hours, or on HIGH 4 to 5 hours, or until chicken is tender.
  • Stir in vinegar, if desired.

I am NOT a cook in any way, but I'm sick of the preservatives and chemicals in processed foods - especially canned soup. :-( My partner had a virus last week, and I discovered your recipe. It is soooooooooooo easy, and DELICIOUS!   2. I was looking for a good crock pot soup that would use up the remaining chicken left from our roast chicken last week. I found this recipe and was really pleased--though I did make some additions/changes. Not being a fan of celery but wanting something green, I substituted spinach (I added it only in the last 30 minutes). Though my chicken was already cooked, I put it in at the start to add flavor to the broth. However, I did hold off on the wild rice until 3 hours in (I was cooking on low). I also added salt, 3 cloves of garlic, and the juice of 2 lemons (lemons added in the last 30 minutes, too). I'm giving it 5 stars because it was a great launching pad for me to figure out how to make a tasty, healthy, slow cooker soup!
     
  3. Very good soup! Nice and easy, the way I like it! I followed the recipe as written except I added 1 heaping T of chicken soup base and only put in 3/4 c each of the celery and carrot (just so I didn't have a lot of leftovers). Next time, I wouldn't put the rice in at the beginning like it is written, just because the rice was a bit overdone for me. I think it would be fine putting the rice in half way through cooking. Otherwise soup is very easy and has lots of flavor. Thanks for posting!
     
  4. Loved this one. Very easy and flavorful. I made it with cooked turkey breast leftovers. Very healthy and good.

Love to cook and bake. Having fun experimenting with recipes I find on RecipeZaar. Haven't found very many I don't like! Most are really great and I love the tips other people who rate the recipes leave. Many nights before I leave work for the day, I search this site for whatever I'm in the mood for and head for the grocery store!
