A very simple crock pot recipe. I suppose you can substitute water for the wine and cook on low for 6-8 hours.

This one was just so-so for our family. I used regular white cooking wine (a Chablis) and just a regular dry Italian dressing mix. I cooked on high for 3 hours and then switched to low for 2 hours and the chicken didn't seem to absorb any of the flavor. But on a side note, the gravy that I made out of the liquid in the pot was pretty good. I am going to make this again with red wine and see what happens.
