Crock Pot Carrot and Bacon Soup

  1. Combine all the ingredients except the sour cream in the slow cooker.
  2. Cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours.
  3. Transfer to a blender or food processor, and purée in batches until smooth.
  4. Return to the slow cooker, and cook for an additional 30 minutes on HIGH; serve with dollops of sour cream.

This was nice, however I did fry my bacon and added only some of the grease/drippings to the crock pot during cooking. After pureeing the soup, I added the bacon bits in. This method left the bacon bits crisper instead of soft-cooked, and avoided any issues with pureeing the bacon pieces.

The whole family loved this soup. Rather than thye crockpot, I did mine on the stove. I must admit I forgot to add the stock powder with the water so it could have done with a little more saltiness for my tastes but toddler DD & hubby didn't notice & devoured it anyway. With the stock powder added I know this would have been easily 5 stars. Thanks for posting this simple & hearty recipe!
