Crock Pot - Best Chuck Roast

"DELICIOUS mainstay on our menu! It makes the BEST GRAVY!!! We have this for dinner quite frequently....good and easy to prepare! All the veggies go in and cook along with the roast. Rice is always served and the roast and veggies are placed on top. UMMMmm!"

directions

  • Cut vegetables and place in crock in the following order: carrots, celery, onion and potatoes. Sprinkle with salt.
  • Brown roast in vegetable oil and place on top of vegetables in crock pot. (More salt may be sprinkled on roast.).
  • In a small bowl mix cream of mushroom soup, ketchup, worcestershire sauce and water. Pour over roast.
  • Cover with crock pot lid and cook 1 hour on high and 4 hours on low. Serve over rice.
  • Enjoy!

  2. Can I cook this on high for 2 hours and then turn it to low? It's already cooking, but I don't want to be up all night! Tomorrow's dinner!

  1. I would recommend this recipe, very very good. I also added a half packet of onion soup mix, 1 small can of stewed tomatoes and about a cup of water. Since I had a late start that morning I put the crockpot on high for 2 hours then turned it on low for 4 hrs. The chuck roast was falling apart and the vegetables were cooked just right. I will certainly make this again since it was a hit with my husband who is a meat and potatoes kinds guy.
     
  2. This is a delicious roast! I basically followed it exactly other than using a little more than a 3 pound roast to serve the four of us. I cooked mine on high for the first hour and then low for about 7 more hours. The roast was fall-apart tender and very flavorful. The vegetables were done just right. Thanks for sharing!
     
  3. Flavor great...timing not so much! Seared 2lb chuck roast & added to potatoes, carrots, celery, onion & added cr of mushroom soup mix. Clearly needed more cook time...maybe 2 hr on high & 6 hr on low.??? Meat not tender Per recipe guidelines
     
  4. I did this lat week with 1 1/2 roast, cook it just like it said for the correct time, potatoes were still a little hard
     
  5. Omg! So flavorful. Unfortunately I had to do my grass fed beef roast for 8hrs but it's so worth it!! Actually most everything I've tried on this site has been really tasty!!

Tweaks

  1. Made this for dinner tonight for the gals. Only a few minor substitutions due to some allergies: I subbed turnips for onions (and used onion powder for flavor), and couldn't use cream of mushroom soup (no mushrooms or flour allowed), so I used some cream and gluten-free cornstarch. It turned out wonderful, although not as "thick" a gravy I would have liked (probably due to the subs). To the person who claimed it was bland, you must season at every step, as you would in normal cooking. Season the beef before you sautee it, season the veggies (only a little), and then season the "gravy". It turned out great, and I'm looking forward to eating the leftovers (if there are any).
