I have been looking for something to use up my pearl barley and this was a good recipe to do it. DH added a bit of precooked sausage to his but I ate it as written -except no mushrooms.

  1. Combine all ingredients except pine nuts in a 3-4 quart slow cooker (do NOT use a larger crockpot).
  2. Cover and cook on low for 6-8 hours until barley and vegetables are tender.
  3. Sprinkle with nuts just before serving.
