Crispy-Topped Cod


  1. Preheat the oven to 200C/Gas 6. Put the cod fillets on a board, season well, then place in a non-stick roasting tin.
  2. Mix together the mayonnaise, lemon juice, zest, and chopped herbs, then spread over the top of the fillets. Place in the oven for 20-25 minutes, or until the fish is cooked through. Serve with the shredded cucumber salad and lemon wedges.
