Crispy Potato and Carrot Casserole

When I tagged this recipe I was gonna make it as written, but when I thought it over, I decided to cut the regular potatoes back to 4 & then include a medium-size sweet potato! I also used lemon pepper instead of the usual S&P, & it turned out very nice ~ At least 4 of us managed to devour most of it in one sitting! [Tagged & made in Please Review My Recipe]

  1. Mix grated potatoes, carrots and onions in a large bowl.
  2. Stir in skim milk powder, oats, eggs, oil, garlic powder, salt and pepper.
  3. Heat oven to 350°F.
  4. Lightly grease a 13x9 pan.
  5. Spread mixture evenly into the pan.
  6. Bake about 30-40 minutes or until potatoes are done.
  7. Sprinkle with cheese.
  8. Return to oven for a few minutes to melt cheese.6.
