Crispy and tender, serve these with mashed potatoes.
- blend eggs and mustard together in a shallow pie pan.
- dip pork in egg mixture, coat with potato flakes.
- heat oil in a skillet, add pork, heating on both sides until done.
Enjoyed these very much, although the mustard didn't give as much flavor as I was expecting.
