Crispy Cabbage Casserole

Top Review by WiGal

Am always looking for veggie recipes and glad I made this one. Simple but very good---and have ingredients on hand typically. Other than the order of ingredient list not matching the order of use-bread needs to be edited so it is listed after sauce ingredients and onion listed first-- this recipe comes highly recommended. Didn't have corn flour so used all purpose flour. Made for Spring PAC 2012. Thank you hectorthebat for sharing.

Ingredients Nutrition

  1. Grease an ovenproof dish or casserole. Trim the outer leaves and stalk from the cabbage. Shred it, not too finely, wash it well, and drain. Peel and chop the onion. Scrape and wash the celery and cut into 1 in (2.5cm) lengths. Heat the oil and butter in a frying pan, and fry the onion gently for 2-3 minutes until soft. Add the celery and drained cabbage, fry gently for a further 5 minutes, stirring occasionally.
  2. Heat the oven at 400F/200C/Gas Mark 6-7. Make a white sauce with the remaining ingredients. Put the vegetable mixture into the greased dish. Pour the white sauce over the top. Crumble or grate the bread into crumbs, and sprinkle these on top of the sauce. Dot with a knob of butter. Bake for 15 minutes in the hot oven until the top is crunchy and golden brown.
