Directions

  1. Preheat oven 400F.
  2. Lightly spray a medium size shallow baking pan with vegetable spray.
  3. Rinse fish and pat dry.
  4. In small bowl, beat egg white with a little water.
  5. Dip fish in egg white, then roll in crumbs.
  6. Arrange fish in baking pan.
  7. Sprinkle with lemon pepper and parsley, then drizzle margarine over all.
  8. Bake uncovered 20 min or until fish flakes easily.

Simple and tasty, though not much of a wow factor. Probably best used with more favorful fish that don't need much zesting up.

I made this with cod and it was wonderful. A great change from my regular baked cod. I mixed the lemon pepper and dried parsley in the crumbs before coating. then drizzled the butter. Very tasty and easy to make. Made for Alphabet Soup Game. Zaney, thanks for posting.

This is a very simple and tasty fish dish for regular fish-avoiders. The only item I changed was to substitute crushed/ground croutons (since we LOVE croutons) for the cornflake crumbs; this made for a very crunchy coated halibut that we all quickly ate!
