Crispy Almond Baked Fish

- 118.29 ml breadcrumbs (either panko or fresh crumbs)
- 78.78 ml blanched slivered almond
- 2.46 ml dried basil or 2.46 ml dried oregano
- 2.46 ml orange zest or 2.46 ml lemon zest
- 1 garlic clove, minced
- 453.59 g fish fillet
- 14.79 ml butter, melted
- 14.79 ml olive oil
- salt and pepper
directions
- Preheat oven to 425°F.
- In a food processor, combine bread crumbs, almonds, garlic, herbs and zest. Pulse until almonds are finely chopped.
- Combine melted butter and olive oil in a small bowl.
- Wrap fish in paper towels to absorb excess moisture. Arrange fish fillets on a parchment-lined baking sheet. Brush tops with melted butter and olive oil mixture. Season with salt and pepper. Sprinkle crumb mixture over fish and pat lightly. Drizzle remaining butter/oil over fish fillets.
- Bake in preheated oven for 8-10 minutes until flakes flakes with a fork.
- Serve with lemon wedges if desired.

Very, Very good. I had almond flour and used that instead of pulsing the almonds into the flour. I did use a sprinkle of Old Bay simply because I think all fish benefits from Old Bay. I also brushed my fish lightly with mayo instead of using the melted butter/olive oil. We loved it and even my picky 10 year old asked for seconds! Thanks.

I am a stay-at-home-mom, or rather, drive-around-in-the-minivan mom to DS7, DD6, DD5 and DS1. DH is lactose intolerant so I have learned to work around that in my recipes. I started baking cookies and such when I was about 9, and cooking daily suppers when I was 13 so I have been in the kitchen for a good percentage of my life already. It's a good thing that it's my favourite place to be!
My favourite appliance is a rice cooker, with the Kitchenaid mixer running a close second. DH bought a Traeger wood pellet barbecue for Mother's Day a few years ago and it is amazing.
I almost always wear an apron in the kitchen because I'm a sloppy cook and stained too many shirts. My favourite is from www.ashtongreen.com, a Canadian website that sells great kitchen stuff.
