These blintzes were great!! I had a little trouble getting the crepes right because I used rice milk, so I had to add a little extra flour to my batter. Once I got that right, they turned out delicious! I love the filling; the sugar sweetens it, while the ricotta gives the interesting texture that I love in blintzes I get at nice restaurants. I will definitely make these again!

This would be better without ricotta cheese.
My husband thinks it would be better with
cream cheese insead of the ricotta.
The ricotta does give it a strange taste.
The rest of the pieces taste wonderful together.

I was a little reticent to try this because of the cheese and sour cream, but boy! am I glad I did! It was so lightly sweet, and very creamy without being too rich. We sprinkled the whole thing with toasted almond slivers. Merci, Adopted Parisian!
