I cut the amounts back by almost half. Even less for the cayenne (red peppers?), and I did not have bay leaf powder. This was a wonderful seasoning, and I dumped in the whole amount for our shrimp creole tonight. (The whole amount probably amounted to a heaping 2 tablespoons.) A little heat, a little intrigue, a lot of taste! My shrimp creole recipe called for Cajun-style stewed tomatoes. I only had regular tomatoes, turned to 'Zaar for help, and voila! A quick and satisfying creole seasoning. Picture I'm posting is the shrimp creole!
