I make this ahead and freeze in one cup portions to use for a quick shrimp creole.
- 4 tablespoons oil or 4 tablespoons butter
- 1 cup diced celery
- 1 cup diced onion
- 1 cup diced green pepper
- 1 garlic clove, minced
- 3 tablespoons flour
- 2 (1 lb) containers tomatoes, chopped (stewed tomatoes may be used)
- 1⁄2 cup catsup
- 1 tablespoon Worcestershire sauce
- 1 pinch sugar
- 1⁄2 teaspoon salt
- Saute celery, onion, pepper and garlic in fat. Blend in flour. Add tomatoes, catsup, Worcestershire Sauce, sugar and salt. Stir well to blend. Cook slowly until mixture thickens.
