This was a wonderful dish and thoroughly enjoyed. Loved the sweetness of the raisins and brown sugar with the onions, peppers and garlic. This is a definite keeper for our cajun-creole cooking parties. Thanks morgainegeiser ~ made for your FOOTBALL POOL WIN DURING DIVISIONAL PLAYOFFS!

Creole? I don't know about that but this recipe sure fit the bill for my needs! I love red beans and rice and rely heavily on beans for dinners. My 5 year old has turned his nose up on all my different recipes. Also, I have just recently discovered I *do* like curry! So I get to experiment with curry and beans (a staple in my home). I was nervous about the raisins so I shorted the 1/2 cup a smidge. I won't do that again! And as a personal preference, I used red bell peppers. Oh, and I used chicken bullion as I didn't have vegetable. Alas, my kid turned his nose up to this one, too, but me and my husband enjoyed it thoroughly and plan on going into my meal rotation. The sweet and smoky flavors were perfect. Nothing was overpowering, it was a great combo. I probably should have cooked the onions and peppers a little more but that is totally operator error!! :)
Thank You!!
