The last time we fried catfish, I decided to try out this hush puppy recipe for a bit of a change. I used a can of mild Rotel tomatoes since I have small children, but you could use the hotter Rotel if you wish. This makes a lot of hush puppies, so you might want to halve the recipe. These were really good and my hubby really liked them but I had to leave out the corn as I can't have it. I agree that it makes a lot but hubby wanted to save leftovers because they were that good. He also wants me to try to use the recipe for baking in a pan as cornbread. Just might try it! I will use hot Rotel next time as they didn't have much zing with the mild. Thanks for a great recipe! - 5 cups self-rising cornmeal
- 1 (14 2/3 ounce) can cream-style corn
- 1 (10 ounce) can diced tomatoes with green chilies

- 2 cups buttermilk
- 3 medium onions, chopped
- 1 banana pepper, chopped
- 1⁄2 cup bell pepper, chopped
- 1 teaspoon creole seasoning
