  1. Brown the bacon in a saucepan.
  2. Add the onions and green pepper.
  3. Cook until just soft.
  4. Add the garlic and cook for 1 minute longer.
  5. Add the tomatoes and hot sauce.
  6. Simmer for 30 minutes over low heat.
  7. Snap the ends off of the beans and cook them in boiling water until soft.
  8. Drain.
  9. Toss them in the sauce.
  10. Serve warm.

My Cajun grandmother does green beans this same way(minus the tomatoes and green pepper).We always add a teaspoon or so of sugar to ours so I added it to this too!!Ooooh weee this were good!I let 'em simmer for a while longer with the tomatoes and we couldnt have asked for a better side dish!Thanks for sharing!!

These were delicious. I didn't have a green pepper, but I am sure that only adds to the flavor. It was a delightful change of pace. Even my children who complain when I spice things up loved it.I added some Frank's Hot Sauce and some Tony Chachere's cajun seasoning. Yum! Also, I just added the beans to the sauce and simmered until they were good and tender.

Great recipe. I also add Tony Cachere's cajun seasoning, mild green chilis and New Mexico Hatch chilis. My husband loves this.
