  • Brown the bacon in a saucepan.
  • Add the onions and green pepper.
  • Cook until just soft.
  • Add the garlic and cook for 1 minute longer.
  • Add the tomatoes and hot sauce.
  • Simmer for 30 minutes over low heat.
  • Snap the ends off of the beans and cook them in boiling water until soft.
  • Drain.
  • Toss them in the sauce.
  • Serve warm.

My Cajun grandmother does green beans this same way(minus the tomatoes and green pepper).We always add a teaspoon or so of sugar to ours so I added it to this too!!Ooooh weee this were good!I let 'em simmer for a while longer with the tomatoes and we couldnt have asked for a better side dish!Thanks for sharing!!
     
  2. These were delicious. I didn't have a green pepper, but I am sure that only adds to the flavor. It was a delightful change of pace. Even my children who complain when I spice things up loved it.I added some Frank's Hot Sauce and some Tony Chachere's cajun seasoning. Yum! Also, I just added the beans to the sauce and simmered until they were good and tender.
     
  3. Great recipe. I also add Tony Cachere's cajun seasoning, mild green chilis and New Mexico Hatch chilis. My husband loves this.
     
  4. Great flavor! I like this recipe because it uses ingredients I always have on hand anyway. I used canned beans and added some creole seasoning and it was still fantastic. I made it for my family at Christmas and by the time I made it to the table, there was none left for me! Even my hubby who doesn't care for green beans ate them up and asked for more. Last time I made it, I had no bacon, so sauted in olive oil and it's still good.
