  1. Boil Chicken until done. Debone.
  2. Chop Bellpepper, Medium sized onion, and celery -- saute until tender.
  3. Add cream of chicken, cream of mushroom, and Rotel. Add chicken.
  4. Simmer on low for 1 hour-1.5 hours.
  5. Serve over rice, and have saltine crackers available.
  6. So delicious and super EASY!
