Another 5 star winning for Lennie! I prepared this as part of Chia's St. Paddy's Day Potluck, and so glad I selected it! The Creme de Menthe Green was perfect for St. Paddy's Day and the flavor was the mint that I love! Cheesecake and mint - a perfect combination! Easy to prepare and a very special treat! Delicious and easy! Just what I like in a dessert! I made it for Christmas dinner and everyone liked it.
This recipe is GREAT! For more flavor, make a topping using 8oz of sour cream, 3T sugar and 3T of creme de menthe. Spread over cold cheesecake, then sprinkle or shave ANDES MINTS over all.
I just made this for a Christmas open house and it was a winner. However, because I wanted all finger food, I made individual mini-cheesecakes in silver cupcake papers which looked very festive. This recipe made 24. Just bake them for 30 minutes but otherwise follow the recipe.
I made this for our Easter dinner. The entire family enjoyed it. I did wish the creme de menthe flavor stood out more. However, it is a winner and I will be making this again and again!
This has become one of my signature desserts- reserved for the month of March. We call it girlscout cheesecake. I do a "mini" version by baking this filling in a cupcake liner. Instead of the crust I put a thin mint (girlscout cookie) in the bottom. I also do a chocolate ganache on the top, with a dollop of whipped cream. I get rave reviews every time.
