Great creamy, tomatoe-y salad dressing. Taken from the Lite Delight cookbook. (Cooking time is refrigeration time)
- 1 (8 ounce) package low-fat cream cheese
- 1 cup light mayonnaise
- 1 cup V8 vegetable juice
- 3 garlic cloves, minced
- 1 teaspoon lemon juice
- In medium bowl, blend (or mix) cream cheese until smooth.
- Gradually stir in mayonnaise until well blended.
- Stir in V8 juice, garlic and lemon juice.
- Cover; refrigerate until serving, at least 2 hours.
