- 2 slices whole wheat bread (to keep carbs down)
- cottage cheese
- 6 slices zucchini
- 6 slices eggplants
- 6 slices summer squash
- 10 g roasted chopped onions
- olive oil
Directions See How It's Made
- Grill zucchini, eggplant and squash.
- Season the slices l-i-g-h-t-l-y with oregano and olive oil.
- Spread the bread with the cottage cheese - as much as you like.
- Layer the slices of zucchini, eggplant and squash on the slices of bread.
- Do NOT put the slices of bread together.
- Sprinkle onion on top of each slice.
- Dig in !
