Creamy Spicy Cheeseburger Soup

This recipe goes back years, you may adjust the amount of heat by adjusting the amount of jalapeno peppers that is added, or you can turn up the heat even more by increasing the cayenne pepper

  1. In a large pot, combine first nine ingredients; bring to a boil.
  2. Reduce heat; cover and simmer for 15-20 minutes, or until potatoes are tender stir in beef and 2 cups cream; heat through.
  3. In a small bowl whisk the flour and remaining milk until smooth; gradually stir into soup; bring to a boil; cook and stir for 2 minutes or until thickened and bubbly.
  4. Reduce heat to low and stir in cheese until melted.
  5. Season with salt and pepper.
  6. Top with bacon just before serving.

I really liked this soup! I added the cayenne pepper and buy my tongue was tingling! It is tasty and comfort to the core. I love the crumbled bacon on the top. I think I may try some rotel tomatoes next time. Thanks for posting!

My husband, the hamburger lover, loved this soup. I added some spices to increase the heat~ red & black pepper, onion salt, and hot Mrs Dash. I left it simmering on the stove as we ended up eating later than planned, and it did thicken up quite a bit, becoming more like a thick stew. I'm sure it could be thinned out again with milk, but, we liked it the way it was.
